Depending on the time of season and weather conditions maple syrup will turn out to be different grades even though it was boiled down exactly the same way. The light colored syrups are grade A and the darker colored and stronger flavored syrups are Grade B. Grade B is great as a cooking additive to sweeten up many different foods.
