Looking for a light and healthy dinner that tastes spectacular? This is one of those midweek winter meals I love. Roasted pheasant recipes may abound primarily because it’s much like roasting whole chicken, except that you have to make adjustments to how you cook the pheasant since it is a smaller bird and has the tendency to dry easily. After all, roasting is a cooking method that uses dry heat, which at first glance may not be ideal for pheasants. But you’ll be surprised how the pheasant comes out beautifully in the oven if you do your roasting right.
